Many of us are forced to adapt our diet to food allergies and illnesses. When Anna MacGillivray, who has a wheat allergy, also needed to adapt her family’s meals to address her husband’s colitis, she began the testing and experimenting that resulted in Colitis Warrior: A Recipe Collection Plus Tips, Traps, and Tales. Inspired by her observations on health as a young nurse, and informed by Gottschall’s book on intestinal health through diet, she has produced more than forty recipes for entrees, soups, salads, beverages, snacks, and baked goods. The focus is on a diet which includes eggs, hard cheese, some beans, legumes, fruits, vegetables, meat, chicken, and fish. These are prepared with tasty spices, condiments, and healthy oils. Recipes use coconut flour rather than wheat flour and avoid white sugar, bread, most other starches, and processed foods. A list of references and links provide further information on specific recipes or topics.
In Colitis Warrior, MacGillivray offers a reasonable philosophy and a practical approach to using food for health and healing. Several recipes cater to my liking for cauliflower and Indian seasoning; but they all sound scrumptious. I can’t wait to try the cauliflower-based pie crust in the Vegetarian Lentil Pie; the Curry Leaf Soup with Beans; the “Dutch Mash” with cauliflower, sauerkraut, and sausage; the Stuffed Green Peppers made with cauliflower instead of rice; the crustless Pumpkin Pie Filling Squares; and the Chai Tea, among others. Though no illustrations are included, the recipe instructions are easy to understand for even novice cooks. A great cookbook to add to your collection, whether or not colitis is a concern.
