In an era of fast foods and prepared meals, it’s sometimes difficult to understand and appreciate the time and effort that should go into making a wholesome meal for a large family – one that is nutritious and affordable. The cost of food continues to climb and, for many people, the cupboards often go bare just before the next paycheque arrives. When the cupboards are empty and there are only meager pickings in the refrigerator, mostly leftovers at that, the family cook needs to be creative to make do with what’s available; to make it healthy, filling and tasty.
Author Amy Raines has first-hand experience, both as a child and adult, in preparing hearty meals with next to nothing for ingredients and filling the empty stomachs of a large, growing family. She has collected her family recipes in Low & Set Income Family Budget Cook Book: Main Dish and Full Meals Volume 1 in the hope of helping others in similar difficult situations be creative with their meals. The book begins with some of the author’s recollections of family feasts whipped up from next to nothing and some suggestions on how to be creative in making a budget meal to feed a large family. She has included recipes like Beef Hash (something I remember well and enjoyed as a child), Corn Chowder, Old Fashioned Boiled Dinner (which in our house sometimes evolved into a Pot Roast by adding a can of stewed tomatoes), plain biscuits, and several other selections. Each recipe is well organized, beginning with the list of ingredients and followed by detailed instructions on how to prepare the dish. This is a good tool for anyone who wants to be more inventive as they stretch the family food budget.
